Tasting notes

Pale yellow in colour with a fine persistent mousse this has delicious aromas of citrus and pear backed by a fresh well-balanced palate with touches of nuts and toasted bread on the finish.

Production notes

The grapes are destemmed and partially pressed before being stabilized cold-settled and filtered. An initial fermentation takes place in stainless steel tanks which lasts for around 12 days. The wine is then bottled where it undergoes a second fermentation lasting for six to eight weeks. The wine then matures on its lees for 15 months and is then dosed prior to corkage.

Yummy!

Who said that Cava is a poor imitation of champagne? This is a delicious tipple that doesn't cost the earth. I bought it to serve at a party.
