A wine of great finesse, rich and oily in the mouth with flavours of candied fruits and dried figs, and a toasty caramel finish.
Harvested by hand, cluster by cluster, the Chardonnay, Savagnin and Poulsard vines are selected and picked individually at the beginning of the harvest to produce this speciality of the Jura.\r\nOnce dried on straw mats, the precious clusters are today "chapped" on racks for 6 weeks where they reach 80% dehydration. After pressing the grapes bursting with sugar, 15 to 18 litres of must is obtained for 100 kilos of grapes which then ferments slowly before ageing in oak casks for at least 2 to 3 years.
