Tasting notes

Luscious with notes of honey candied peel spices quince liquorice with perfect balance thanks to a long clean finish.

Production notes

Only fruit affected by noble rot (botrytis) was picked by hand during the second pass through the 'Bruandieres' and 'Moulin Perrault' vineyards. After pressing the sticky juice cleared by settling before undergoing a long slow ferment in vats. The ferment used the yeasts brought into the winery on the skins of the grapes. Chilling and sulphuring stopped the ferment with sweetness in the wine it then aged in barrel for a further 15 months.

Delicious served chilled at the end of a meal or pair with gently spiced oriental dishes.
