Production notes

This NV is a blend of wines from over 55 different sites, each vineyard was picked and vinified separately. The fruit was pressed as whole bunches and the clean juice fermented in temperature controlled stainless steel tanks. Chardonnay made up about 45% of the blend, providing finesse and elegance. Complexity was enhanced by the inclusion of 10-20% reserve wines. After bottle fermentation the wine aged with its lees for over 3 years before disgorging.
